Unfortunately HUI only manage 8 channels at a time, but you can scroll the channels, channel by channel or in blocks of 8 channels. The reason for this is because the HUI protocol needs one MIDI port for every 8 channels and the d8b only has one MIDI port.
The Ethernet is used mainly for two things, one is to link 2 consoles to work in a tandem and the other, to FTP files from the d8b to another computer as a backup option. But you can always backup your sessions via floppy
